Flavorful Phool Makhana Curry Recipe
This delicious and wholesome Phool Makhana Curry is packed with flavor and nutrients. Perfectly roasted makhana (lotus seeds) combined with a rich, spiced gravy makes for a satisfying dish. Serve it with chapati or rice for a comforting meal.
Ingredients
Main Ingredients:
- 2 cups Phool Makhana (lotus seeds)
- ½ cup peas
- ½ cup finely chopped onions
- 1 cup tomato purée
- ¼ tsp cumin seeds
- 2 tbsp oil
- Salt (to taste)
- Fresh coriander leaves (for garnish)
Spices:
- 2 tsp red chilli powder
- 1 tbsp coriander powder
- ½ tsp turmeric powder
- 1 tsp garam masala
For the Paste:
- 1 large onion
- 5 garlic cloves
- 1-inch ginger piece
- 1 tsp poppy seeds
- 5 cashew nuts
- 1 tsp oil
Instructions
Step 1: Prepare the Paste
- Heat 1 tsp oil in a pan and sauté the chopped onions until they turn translucent.
- Add ginger and garlic, cooking until they release their aroma.
- Remove from heat and mix in poppy seeds and cashews. Let the mixture cool.
- Blend it into a smooth paste using a little water. Set aside.
Step 2: Roast the Phool Makhana
- In a dry pan, roast phool makhana on medium heat until they turn crispy.
- Remove from heat and set aside.
Step 3: Cook the Gravy
- Heat 2 tbsp oil in a pan, add cumin seeds, and let them splutter.
- Add chopped onions and sauté until they turn soft and pink.
- Stir in the ground onion paste and cook for 2 minutes on low heat.
- Mix in tomato purée, red chilli powder, coriander powder, and turmeric powder.
- Cover and let it cook for 4-5 minutes until the oil starts separating.
- Add peas, salt, and some water, then cover and simmer for another 3-4 minutes.
Step 4: Add Phool Makhana & Finish
- Stir in the roasted phool makhana, mix well, and cook for another minute.
- Turn off the heat. The gravy will thicken as it cools.
- Tip: If making ahead, add phool makhana just before serving to maintain its crunch.
- Garnish with fresh coriander leaves.
