  • 2 tbsp kasuri methi (dry roasted and crushed)
  • 4 tbsp fresh coriander, chopped

  1. Blanch the vegetables (baby corn, beans, cauliflower, carrots, and corn) and set them aside.
  2. Heat oil in a pan and add cumin seeds and green chili.
  3. Add ginger-garlic paste and onions, sautéing until they turn soft.
  4. Mix in the tomato puree, ketchup, turmeric, and red chili powder. Cook for a minute.
  5. Stir-fry the bell peppers and tomatoes for about 2 minutes.
  6. Add the blanched vegetables, salt, and spices. Stir well, cover, and cook on low heat for a few minutes.
  7. Gently mix in the paneer and cook for a short time before turning off the heat.
