If you’re craving a quick and delicious South Indian breakfast, this Rawa Dosa recipe is just what you need! It’s light, crispy, and packed with flavor.
Ingredients
- 1 cup fine rawa (semolina)
- 1/2 cup rice flour
- 1/2 cup all-purpose flour (maida)
- 2 tbsp curd
- 1-2 green chilies, finely chopped
- 1/2 inch ginger, grated
- Salt to taste
- 2 1/2 – 3 cups water
- 1 tbsp oil
- 1 tsp cumin seeds
- A pinch of asafoetida
- A few curry leaves
- Oil or ghee for cooking
Instructions
- In a mixing bowl, combine rawa, rice flour, all-purpose flour, curd, green chilies, ginger, and salt.
- Gradually add 2 1/2 cups of water while whisking to create a smooth, thin batter without lumps.
- Heat 1 tbsp oil in a small pan, then sauté cumin seeds, asafoetida, and curry leaves briefly. Add this seasoning to the batter and mix well.
- Let the batter rest for 20-30 minutes to enhance flavor and texture.
- If the batter thickens after resting, add a little more water to achieve a runny consistency.
- Heat a non-stick tawa (skillet) and pour a ladle of batter onto it, moving in a circular motion from the center outward.
- Drizzle oil or ghee around the dosa and cook until the edges turn golden brown.
- Flip and cook the other side for about 30 seconds to a minute.
- Serve hot with coconut chutney, sambar, or tomato chutney.
Tips for the Perfect Rawa Dosa
✔ Thin Batter is Key: The batter should be runny for easy spreading. Add water if needed.
✔ Resting Time Matters: Letting the batter sit for 20-30 minutes enhances texture and taste.
✔ Even Spreading: Start from the center and move outward in a spiral motion for an even, crispy dosa.
✔ Use Oil or Ghee: Applying oil or ghee along the edges gives the dosa a crisp texture and rich flavor.
Serving Suggestions
