  • 2 1/2 – 3 cups water
  • 1 tbsp oil
  • 1 tsp cumin seeds
  • A pinch of asafoetida
  • A few curry leaves
  • Oil or ghee for cooking

Instructions

  1. In a mixing bowl, combine rawa, rice flour, all-purpose flour, curd, green chilies, ginger, and salt.
  2. Gradually add 2 1/2 cups of water while whisking to create a smooth, thin batter without lumps.
  3. Heat 1 tbsp oil in a small pan, then sauté cumin seeds, asafoetida, and curry leaves briefly. Add this seasoning to the batter and mix well.
  4. Let the batter rest for 20-30 minutes to enhance flavor and texture.
  5. If the batter thickens after resting, add a little more water to achieve a runny consistency.
  6. Heat a non-stick tawa (skillet) and pour a ladle of batter onto it, moving in a circular motion from the center outward.
  7. Drizzle oil or ghee around the dosa and cook until the edges turn golden brown.
  8. Flip and cook the other side for about 30 seconds to a minute.
  9. Serve hot with coconut chutney, sambar, or tomato chutney.
